Notes, News, and Nerdiness from JKLA World HQ

The JKLA team is headed off the grid, along a river, and into a canyon. Yes, seriously!

Next week, we'll be out in Canyonlands National Park for the Kenji x Moab Musical Festival Cataract Canyon Trip. The theme of this year's trip is This Land: Exploring how quintessentially American music and food grew from global exchange. American traditions are never single-storied monoliths; they're ever-evolving products of exchange, migration, and adaptation.

This four-day trip combines hiking, whitewater rafting, and camping with good music and good food. It's going to be an ultimate dinner and a show experience. If any Frienjis here on Patreon will be joining us, say hey in the comments below!

While we're off the grid, we wanted to give you a heads up there will be no Patreon or YouTube posts or videos next week. We'll see you on the other side of the canyon!

Honing Our Knowledge...

Last week, we sent out an article all about how to sharpen a dull knife, diving into the distinction between honing and sharpening and how to do both. But, after a number of you pointed out a common misconception was being shared—about how honing doesn't remove material from your knife—Kenji headed back to the drawing board and issued a correction, which you can read here.

ICYMI: Research done by Science of Sharp shows the work being done by a honing rod does, in fact, remove material at the knife's microscopic apex to create a brand new cutting edge; it does not simply "re-align" its apex, as is commonly believed and taught. We highly recommend diving into the Science of Sharp's research to learn more: What Does Steeling Do? Part 1 and What Does Steeling Do? Part 2.

It seems almost obvious in retrospect but, after all, constantly learning and improving is what's required to stay sharp!

Whether you're looking for a kitchen project as we head into these autumn and winter months or are simply a fiend for a flatbread and want to give the dishes above a try, consider giving the club a try. We have it on good authority it's the most dedicated community of cooking nerds on the planet.
